To Market, To Market To Buy A Fat Pig

Okay, so we’re not actually buying it at market, it’s from our milk and chicken farm, Kookoolan Farms and it’s also not a fat pig because it has been pastured and fed no grains, but it is a pig. It will give us a nice respite from chicken and beef and the vegetarian meals that we eat. We’ve not really bought pork for about a year now. I can’t wait to try some! I’m heading over to get it now.

    I bet this pig will be really yummy! I have never eaten pastured pig I don’t believe. Let me know how it is. Mom

    Let us know how it tastes. We’ve gone back to eating grain fed pigs as there just isn’t enough fat to make the bacon. We’ve found that we just prefer a little fat around the edges of our pork because pork doesn’t marble like beef does. Actually, we like our beef grain fed a little as well – at least a couple of weeks before we go to the butcher. There’s just something aboutthe taste of the grain fed beef that we prefer. We do love the strictly pasture fed for hamburger, though, as they always are so lean. However, I like a little marbling in the steaks for the tenderness and flavor. Let me know how long they let the pig stand after butchering, too. We’ve found that makes a difference with beef, and I wonder if it makes a difference with pork?? We will be thinking of you as we are only getting a small turkey breast and a nice yummy ham for tomorrow. John says turkey is fowl meat so he is not will big on it. You know, those play on word jokes just lose their ummph when you type them out. :):) Be blessed tomorrow as you think about all that you’re thankful for!!!

    Cathy-Lawrence isn’t big on turkey, but it is one thing I insist on. We have loved our pastured beef. This pork is very lean. There was almost no bacon. I’ll report on the flavor for you and Mom.
